In addition to being able to inflate themselves to avoid being eaten by predators, most puffers also contain a potent neurotoxin (tetrodotoxin) that is roughly 1,200 times more poisonous than cyanide to a human, making them one of the most poisonous vertebrate species in the world. In spite of that however, they are popular throughout China, Korea, and Japan as a delicacy, but they must be served by trained, government-licensed chefs that know which parts of the fish to serve, and in what quantity that would be safe for human consumption.
