With Empoleon's HA getting replaced with a better one/better version of the same one, and Shiftry's ability changing from Early Bird to Wind Rider, can we assume some of the Starters's Hidden Abilities might be getting changed for the better?

Sharpness Samurott seems likely right now, thankfully. Still not as good as Hisiuan Samurott, but it'd be a deserved buff and replacing a terrible HA for it to begin with. We'd have to wait until DLC to find out, however.

Well, checking TMs for a fresh caught Ekans, I see: Knock Off Lash Out, Toxic, Haze among the new stuff. Probably need a Duskull or Dusknoir to check that next from a raid.

People roasting Fezandipiti for no reason, its supposedly fairy poison which is bad offensively, so its better for it to have defensive stats. Also since its a bird it probably gets roost, maybe even defog.

people say toxic chain is "hella broken" but this meta has been fast-paced and offense-heavy enough that i've found myself preferring regular poison in many cases because it does more damage in the short term
